Introduction

Gorgeous colorful salad for those balmy hot days. Gorgeous colorful salad for those balmy hot days.
Number of Servings: 10

Ingredients

    2 cups dry quinoa
    1 tin black beans
    1 tin yellow corn
    2 bunch green onions
    1 avocado
    juice of 1 lime
    nutritional yeast to taste

Directions

Cook quinoa according to instructions and allow to cool.
Mix with tinned corn and beans.
Chop green onions and add to mix.
Chill for at least 1 hour.
Just before serving, add juice of one lime and chopped avocado.

Enjoy!
