Easy alternative to pancakes. Easy alternative to pancakes.
Number of Servings: 6

Ingredients

    8-oz can corn
    1/4 C whole wheat pastry flour
    2 egg whites
    1/4 C unsweetened soy milk

Directions

Add corn to a food processor or blender and pulse a few times. Add remaining ingredients and blend until mixture is combined and a little chunky. Pour 1/4 cup of the mixture onto heated skillet, sprayed with oil. Turn when edges start to dry out.
