Introduction

Delicious, moist muffins! Delicious, moist muffins!
Number of Servings: 24

Ingredients

    4 eggs
    2 C sugar
    1 C extra light olive oil
    1 tsp vanilla
    4 C white whole wheat flour
    1 tsp salt
    1 tsp baking soda
    2 tsp baking powder
    2 C plain, lowfat yogurt
    2 C mixed berries, fresh or frozen

Directions

Beat eggs. Gradually add sugar. While beating, slowly add oil and then vanilla. Combine dry ingredients; add alternately with the yogurt. Fold in berries. Fill muffin cups 1/2 - 2/3 full. Bake at 400 degrees for 20 minutes.

Note: I usually get more than 24 muffins from this recipe.
