    1 English cucumber (350gr)
    20 Cherry tomatoes
    1 Red bell pepper
    1 can (12 oz) yellow sweet corn
    2 tbsn sour cream reduced fat
    lemon juice to taste
    Dill weed fresh (5 springs)


Wash, cut and mix veggies together. Add sour cream and lemon juice. Salt pepper and herbs (fresh dill or cilantro suggested) to taste. Serve cold as a side dish (4 portions) or double it up for a light entree!
