Number of Servings: 8

Ingredients

    3 c asparagus - diced
    3 cup potatos- peeled and diced
    2 tbls scallions- diced
    2 tsp nutmeg
    1 tsp salt
    dash pepper
    2 cups heavy cream
    4 cup chicken broth (can use vegtable stock for a vegatarian version)
    2 tbls flour
    1 tbls olive oil

Directions

1. heat oil in a large pot
2. add scallions and suate until cooked
3. sprinkle flour to coat scallions
4. add in chicken broth, cream, potatoes, and asparagus
5. cook on medium high heat, stirring, until thick and bubbly
6. lower heat and cover- cooking an additional 10 minutes or until potatoes are soft.

Serving Size: makes about 8 - 1.5 cup servings
