Ingredients

    100g wholewheat flour
    100g plain flour
    2 treaspoons of ground cinnamon
    pinch of salt
    1/2 tea spoon of bicarbonate of soda
    3 teaspoons of baking powder
    2 table spoons of agave nectar (or black strap mollasses can be used)
    150ml of 1% milk
    1 large egg
    zest and juice of 1 orange
    1 tablespoon groundnut (or other vegetable) oil
    2 small grated apples
    1 large grated carrott
    2 tablespooons of dried apicot (or use other dried fruit)
    1 table spoon of agave nectar or honey for drizzling over the muffins after cooking

Directions

preheat oven to 200 celius (190 for fan)
sieve the flours together, also the cinnamon, bicarbonate of soda & baking power into a large bowl.
in a separate jug mix the milk, egg, orange juice, groundnut oil & agave nectar with a woden spoon.
pour the liquid mixture over the dry mixture and combine them together lightly.
gently stir in the grated apple, grated carrott,
