Make yogurt cheese: 3 cups of full-fat plain yogurt in a cheesecloth lined strainer over a bowl. Let sit overnight to remove the whey. Remaining portion is your yogurt cheese.

Make Blueberry sauce: Combine 1 Tbsp of arrow root powder with 1 Tbsp lemon juice till smooth. Set aside. In a small saucepan combine 2 cups fresh blueberries and 1/4 cups water and heat until berries mash easily iwth a fork. Add arrow root/lemon mixture and heat until bubbly and slightly thickened. Remove from heat and cool. Sweeten to taste w several drops of stevia liquid. Refrigerate.

To make 'pops'. Using either Popsicle molds or small plastic or paper cups alternate layers of yogurt cheese and blueberry sauce --- tapping between each layer to remove air pockets. Leave space at top for expansion. Insert Popsicle stick or holder. Freeze at least 4 hours.
