Number of Servings: 11

Ingredients

    1 pound dried cplit peas
    1 pound ham
    2 tbls olive oil
    1 cup chopped onion
    1 cup chopped carrots
    1 cup chopped celery
    4 cups vegetable broth
    2 cups water

Directions

Dice onion, celery & carrots. Heat olive oil in large pot then add the celery & onion. Saute for 5 minutes then add in the ham. Heat through and add the split peas and liquids. Heat to boiling then reduce heat and simmer for 1.5 hours. Stir occasionally. Add carrots and cook for about 30 more minutes until tender.

Makes about 11 - 1 cup servings.

    I live alone and halved the recipe. It made enough for one filling meal and an extra (small) bowl for tomorrow. It was already salty enough for me with none added. I want to THANK the person who created/shared the recipe! - 3/8/15

    Very easy, very filling! This is great for a nice warm lunch or dinner. I added some salt to mine because I love salty soups. Also put in some seasoned croutons as an added filler. Will definitely make again! - 10/2/08

    Very Good
    I had to add extra water to make it soup rather then think glop, but it was very tasty. - 1/27/08
