A quick & healthy soup with little fuss! A quick & healthy soup with little fuss!
Number of Servings: 11


    1 pound dried cplit peas
    1 pound ham
    2 tbls olive oil
    1 cup chopped onion
    1 cup chopped carrots
    1 cup chopped celery
    4 cups vegetable broth
    2 cups water


Dice onion, celery & carrots. Heat olive oil in large pot then add the celery & onion. Saute for 5 minutes then add in the ham. Heat through and add the split peas and liquids. Heat to boiling then reduce heat and simmer for 1.5 hours. Stir occasionally. Add carrots and cook for about 30 more minutes until tender.

Makes about 11 - 1 cup servings.

  • Very easy, very filling! This is great for a nice warm lunch or dinner. I added some salt to mine because I love salty soups. Also put in some seasoned croutons as an added filler. Will definitely make again! - 10/2/08
