Ingredients

    * Chicken Leg Quarters, skinless, 4
    * Sugar-Free Apricot Preserves, 2 tbsp
    * Del Monte Lite Diced Peaches, 4 oz
    * Lite Soy Sauce, 2 tbsp
    * Fresh Ginger Root, 1 tsp, Minced
    * Fresh Garlic, 1 clove, Minced
    * kosher salt, 1/2 tsp (**to taste)
    * Cracked pepper, 1/2 tsp (**to taste)
    * Crushed Red Pepper Flakes, 1/8 tsp
    * Chicken Bullion Granules, 2 tsp.

Directions

1. Spray large skillet generously with non-stick spray
2. Salt and pepper chicken pieces and place "skin side" down in large skillet
3. Cover skillet and cook on medium heat until browned (approx. 10-15 min.).
3. Turn chicken pieces over in the skillet, cover, and cook additional 15-20 minutes, checking occasionally
4. Meanwhile, mix apricot preserves, peaches, soy sauce, ginger root, garlic, crushed red pepper flakes, and chicken bullion granules together. Pour over chicken pieces in skillet.
5. Turn heat to medium low. Cover skillet and cook for an additional 15-20 minutes, turning chicken once or twice.
