Introduction

The texture of this comes out almost like mashed potatoes but not as smooth -- almost like grits. I serve it to guests and they always ask how I made homely old cauliflower taste so good! Ingredients

    1 large head of raw cauliflower
    1 small onion (about 1/2 c.if you want to chop it)
    1/4 cup lo-fat cream cheese
    2 tablespoons Smart Balance buttery spread
    1 chicken bouillon cube or a tsp. of the granules
    Salt & pepper to taste

Directions

Cook the cauliflower, bullion cube and onion till soft in as little water as possible. Using a food processor, process the cauliflower, onion, cream cheese and margarine, adding as much of the cooking water as needed to make it the consistency of mashed potatoes. Add salt and freshly ground pepper. Serve as a substitute for mashed potatoes or as its own delicious dish.

Serving Size: Makes about 5 servings of 1 cup each

    The number of servings is 5, divide into the total calories of 550 and you get 110 calories per serving. Not sure how this happened and do not know how to correct it - so you have to do a little Math on your tracker.
