Introduction

Couldn't find the original recipe, so improvised with what I could glean from memory...a tortilla dipped in egg batter and filled with warm bananas. A great way to use ripe or overripe bananas! The ripe banana is sweet enough to not require any additional sweetening, and the finished product needs no added syrup! Ingredients

    1 Whole Wheat Tortilla
    1 Large Egg
    1 Tbsp Unsalted Butter (or a GOOD butter substitute), divided in half
    1 Large Very Ripe Banana, thickly sliced
    1/2 tsp Ground Cinnamon, divided in half

    I used two frying pans simultaneously, but you may do the bananas first and set aside, rinsing the pan in between.

Directions

Heat 1/2 butter in pan (medium high) while whisking egg with 1/2 of cinnamon. Sprinkle banana slices with remaining cinnamon.

Place spiced banana slices in heated butter and cover. Flip slices when browned on underside (about 1-2 minutes). If banana slices won't flip neatly, don't sweat it, they're just the filling, they're supposed to be mushy! When other side is golden brown, remove from pan, and set aside. Rinse pan, and heat other half of butter.

When butter heated, pour in half egg mixture and immediately place tortilla on top. Cover top of tortilla with remaining egg mixture. Cover pan and let cook until golden on underside (about 2-3 minutes). Flip tortilla, place bananas on top and cover pan to finish cooking (about another 2 minutes). Fold over, remove from heat, and enjoy!

Serving Size: 1 large tortilla, french toasted!
