Introduction

Love using fresh local produce, and never know exactly what to do with it. With this recipe I used zucchini and sugar peas...but will switch out to use eggplant, peppers, squash, and other local favorites as they become available...or instead of switching, add them right into the mix! Ingredients

    12 ounce bag of Wacky Mac (or any dry pasta of your choice)
    110 sugar pea pods
    1 small zucchini
    10 ounce can of cooked chicken
    6 tbsp of soy sauce (if you don't like soy, feel free to switch this up)
    4 tbsp red cooking wine
    1 tbsp grated parmasean cheese
    4 tbsp fat free italian dressing

Directions

Boil pasta, drain and set aside (you could do this a day or several hours in advance if you like). Spray a fry pan with pam or use an oil of your choice (not included in nutritional information) and spray the pan. Add the vegetables and cook until they become a little tender, but not too soft. Add the chicken, pasta, and soy sauce. Cook in pan until heated through. Serve immediately and enjoy!

Serving Size: makes 7 servings of about 2 cups each
