Ingredients

    1 can black-eyed peas (drained)
    1 can white shoe peg corn (drained)
    1 jalapeno pepper (or 2 for more heat) seeded and diced
    1 red onion diced (small - medium size, your preference)
    3-5 Roma tomatoes, or use small vine ripened
    Kraft Zesty Italian Dressing, to taste

Directions

No cooking! Just throw everything together and mix it up.

Refrigerate for at least 12 hours.

Serve as a side dish with Tostitos scoops or other favorite chip, or serve as a side with grilled salmon.

You can add more heat by adding a second diced jalapeno, or add more tomatoes if you like. You don't have to use Roma tomatoes... regular vine ripened tomatoes work too.

Use as much Italian as you wish... judge as to how much tastes good to you.

Great summer side dish!
