This is my attempt to make a quick and semi-healthy dessert. It doesn't gel as well as it would with dairy milk but it does satisfy a major chocolate craving. Ingredients

    1 eight-ounce box sugar free chocolate pudding
    3 cups unsweetened coconut milk
    2 tablespoon ground flax or chia seed

Directions

Make pudding according to directions, using 3 cups coconut milk in place of dairy milk and adding ground flax or chia seed to help it gel and get a little extra nutrition kick.

Serving Size: 6 1/2 cup servings
