Ingredients

    1 large onion, chopped
    4.5 oz carrots, chopped
    2 celery stalks, chopped
    1 tbsp minced garlic
    1 tsp olive oil
    6 cups vegetable broth
    1 tbsp soy sauce
    2 tsp ground cumin
    1 tsp ground oregano
    2 bay leaves
    1 head of kale
    1 lb dried lentils
    28 oz diced tomatoes

Directions

Saute first 5 ingredients. Place in crock pot with remaining ingredients except kale. Cook on high 1 hour then low for the rest of the day. Chop kale and add to crock pot. Cook additional 30 minutes, until kale has softened. Makes 16 1-cup servings.
