Introduction

Delicious healthy no-bake snack cookies! Vegan too. Not raw, but I bet could be easily adapted to be raw if you crazy like that.

My mom used to make these with coconut, peanut butter and carob nibs back in the days of yore. I Imagine her standing in our kitchen in a long ethnic type skirt when I make these :) Silly hippie.

Ingredients


    1/4 cup almond butter. I used chunky unsalted. If you use salted you should probs eliminate the extra salt.
    1/2 cup Whole Rolled Oats
    1/4 cup Pure Maple Syrup (I actually used 1/2 agave 1/2 maple, you could probably substitute any liquid sweetener you wanted, i.e. honey, brown rice syrup, whateves.)
    1/2 tsp. Cardamom
    1/4 teaspoon Cinnamon
    Pinch of Sea Salt

    You can add loads of fun stuff to this! Like chocolate, carob, unsweetened coconut, other nuts, dried fruit. I was tempted to roll these in sesame seeds but I decided against it. Maybd next time!

Directions

Mix all ingredients in a bowl. Drop by full teaspoon onto a piece of parchment paper. Refrigerate overnight, or pop in the freezer if you can't wait that long!

Serving Size: Makes 12 fun nibble-sized cookies!
