8 oz Chicken leftover cooked chicken breast
4 cups baby spinach leaves
1 small onion sliced into thin onion rings
1/2 cup fresh blueberries
2 oz. blue cheese crumbles
1 oz walnuts chopped and lightly toasted
4 basil leaves chopped
Directions
Divide spinach between two large bowls.
Slice chicken breast and divide between bowls
put half of each remaining ingredients on top.
Drizzle each bowl with dressing
Serve immediately with a couple of crunchy breadsticks on the side.
