Ingredients

Pastry
2C plain flour
1/4 tsp salt
125g butter
cold water
Filling
500g minced beef
160g chopped onion
43g diced carrot
156g grated zucchini
43g pepper (bell)
1 x 400g tim tomatoes (any flavour)
Any other vegetables that you would like. (not included in calories).
Topping
150g Potato flakes
50g low fat margarine
1C low fat milk
hot water
25g grated cheese
Directions
make pastry by rubbing the butter into the flour and salt. Add cold water slowly until it forms a stiff dough. Knead on a floured board then cool in fridge for at least 15 mins.
Brown onion and mince in a frypan add all the other ingredients. Thicken with 1Tbls of cornflour. Drain of excess juice and use for gravy.
Roll out pastry and put into pie dish. Add mince mixture to pastry.
Add together the potato flakes, margarine, and milk into a bowl. Mix in the hot water until it is binded together. Put on top of the pie and sprinkle with the grated cheese.
Cook in the oven on 180 degrees C for 30 minutes or until pastry is cooked through. Bottom rack is good for this as it makes the bottom of the pie cook.
