Introduction

Carrot cake what??? Yes, carrot cake porridge! And it's absolutely delicious. So delicious that I don't restrict this to breakfast - I like to have it as an afternoon treat on a rainy weekend :)

There's something really satisfying about getting a portion of vegetables into your breakfast! But don't worry, this doesn't taste like it has veg in it - think yummy carrot cake but warm and soft.

Number of Servings: 1

Ingredients

    Half a cup of porridge oats

    Half a cup of low-fat milk

    Half a cup of water

    I finely grated carrot

    1 tablespoon of raisins

    1 teaspoon of vanilla extract

    1 teaspoon of cinnamon

    Half a teaspoon of ground ginger

    1 tablespoon of chopped walnuts

    I tablespoon of brown sugar (muscavado is my favourite for this)

Directions

Mix together the oats, milk, water, grated carrot, raisins, vanilla, cinnamon and ginger in a saucepan.

Bring almost to the boil but don't allow to boil. Reduce it a simmer and leave for 7 to 8 minutes, stirring every minute or so. Keep an eye on it in case it needs another drop of water.

Stir in the sugar and top with walnuts.
