Introduction

Number of Servings: 6

Ingredients

    6 Roma Tomatos, seeded and chopped
    1 English cucmber, chopped
    10 Green Onions, chopped
    1 Cup Parsley, chopped fine
    Juice from one lemon
    1/4 cup Olive Oil
    Salt and pepper to taste

Directions

Gently toss the tomatos, cucumber, onions, and parsley until thoroughly mixed (I used my bare hands as it allowed me control and prevented the tomatos from bruising too much). Add in the lemon juice and olive oil and toss again until all veggies are coated. Salt and pepper to taste.

Serving Size: Makes about 6 servings
