Taken from America's Test Kitchen. I halved the recipe but added the full amount of romaine. This is absolutely delicious, especially when eaten with pita bread and hummus. Ingredients

1/2 medium cucumber, peeled, seeded, and cut into 1/2" dice
10 grape tomatoes, quartered
~1/2 tsp salt (or to taste)
1.5 T extra virgin olive oil
1.5 T red wine vinegar
1 medium clove garlic, minced
1/2 can (7oz) garbanzo beans (chickpeas), drained
1/4 c pitted kalamata olives, chopped
1/4 small onion, minced
1/4 c roughly chopped fresh parsley
1 romaine heart, cut into 1/2 in pieces (about 3 cups)
2 oz fat free feta cheese, crumbled
freshly ground black pepper
Directions
Combine cucumber, tomatoes, and salt in a colander set over bowl and let stand 15 minutes.
Whisk oil, vinegar, and garlic together in large bowl. Add drained cucumber and tomatoes, chickpeas, olives, onion, and parsley; toss and let stand at room temperature to blend flavors, 5 minutes.
Add romaine and feta; toss to combine. Season with salt and pepper and serve.
Serving Size: Serves 2 as a light entree or 3 as a side dish. Nutrition values are for 2 servings.
