Introduction

I had received a number of tomatoes and summer squashes in my CSA share. Here is a recipe that helps use them up. You may substitute beef, pork, veal or sausage for the bison. Number of Servings: 8

Ingredients

    1 lb ground bison
    2 lg cloves garlic, minced
    3 medium tomatoes
    1 medium zucchini
    2 small summer squash
    2 Tbsp dried basil (may use fresh if you have it)
    1 tsp dried oregano (may use fresh if you have it)
    1 (11.5 oz) can low sodium V8

Directions

Heat a skillet over medium heat. Add bison and minced garlic; saute until meat is no longer pink. Set aside. Wash tomatoes, cut in half and then into thin wedges. Wash zucchini and squash; cut in half lengthwise and then slice into 1/4 inch slices. Place squash in bottom of crock, then tomatoes and meat mixture. Add spices. Pour V8 over entire mixture. Cover and cook for 6-8 hours on LOW. Serve over pasta (not included in nutrition info).
