Introduction

A nice alternative to a traditional lettuce salad. Great alone or served on fajitas or asian tacos for an unique flavor. Lactose-free, dairy-free, gluten-free (check your vinegar/lime juice to be sure). Great for picnics because no refridgeration is required.

Number of Servings: 4

Ingredients

    2 small summer squash (zucchini will work too) cut into julianne strips
    1/4 onion sliced thinly (cut slices in half)
    1 tbsp white vinger (or lime juice)
    2 tbsp fresh cilantro chopped
    1 tbsp fresh green onion thinly sliced or chopped
    1 dash salt (more to taste)

Directions

Mix all ingredients and let sit in refridgerator for 15 minutes. Serve alone or on tacos (as an alternative to salad).
