Ingredients

Chicken Breast, no skin, 1.5 breast, cooked and shredded
*Peppers, sweet, red, fresh, 1 cup, chopped
Yellow Peppers (bell peppers), 1 cup chopped
sweet raw onion, 1 cup chopped
Kroger Fat Free Sour Cream, 1/2 C ( I didn't have enough ff sour cream, otherwise it would have all been fat free)
Western Family low fat sour cream, 1/2 C
swanson low sodium 100% fat free chicken broth, 2 cans
Savory Rice, 16 servings
*Hillshire Farm Premium Deli Thin Sliced Hickory Smoked Ham, 5 servings
Swiss Cheese, 1 cup, shredded (recommend 2 if you like cheesy stuff)
Directions
This is the first time I've made this. I would make it differently next time. I would recommend layering and mixing the broth with the sour cream before adding it, as well as mixing it with the ingredients before putting it in the dutch oven.
In a large sauce pan, saute the peppers and onions. I would also add mushrooms if you like them. combine with the meat and rice, add sauce and put half in dutch oven (lined with foil for easier clean up) and a layer of cheese and then the rest and another layer of cheese.
cover and use 14 coals on the bottom and 16 on top. should take about 45 minutes.
Serving Size: makes about 15 servings
