Ingredients

    1/4 cup onion, chopped
    1/4 cup carrots, sliced thin (or shredded carrots)
    6 oz (1 package) portabella mushroom caps, cubed
    2 cups fresh spinach
    1 clove garlic, grated
    1 tbsp fresh ginger, grated
    2 tbsp peanut satay sauce
    1-2 tsp lime juice
    1 tbsp vegan sour cream
    2 tbsp hot water
    hot sauce (optional)
    1/4 tsp ground tumeric

Directions

Cook onion and carrot on low heat with s spray of fat-free cooking oil until soft. Add mushrooms. When mushrooms are soft, add spinach, ginger, and garlic.
Mix together satay sauce and hot water. Add lime juice, sour cream, tumeric, and hot sauce.
Add sauce and brown rice to veggies. Cook until hot. Serve and enjoy!
