Number of Servings: 8

Ingredients

    12 ounce bag Wacky Mac Pasta or broken lasagne noodles
    16 oz bag frozen broccoli thawed and warmed up
    8 oz neufenchatel (light cream cheese)
    I jar of tostito's salsa medium (regular NOT cheese)
    1 lb 12 oz of chicken breasts cut into 1" chunks
    2 T. of extra Virgin Olive Oil to brown chicken in
    4 oz of pepper jack cheese

Directions

start water to boil for pasta.
heat pan with olive oil and when hot add and brown chicken and garlic.
when almost cooked through, add entire jar of salsa and the cream cheese, let it all baste together. Salsa, chicken and cream cheese) stir occasionally to break up cheese, and prevent scorching.
water should be boiling by now, and add your pasta cook to manufacturer's instructions. Heat up thawed broccoli in microwave. set aside.
Cover chicken lowere temp to medium low while pasta cooks.
Drain pasta, add broccoli to pan, then pasta, add chicken mixture and mix all in one pan and serve.
large cereal bowl (about 2 cup serving) is approx 450-550 calories. :) Yummmm.


Serving Size: makes a large pan enough to feed 8 or 2 adults and two teens. :)
