Introduction

Ingredients

    3/4 cup dry lentils
    1.5 cups water
    2 Tbsp cider vinegar
    1 Tbsp olive oil
    1 cup finely minced onion
    3-5 garlic cloved, minced (your preference)
    10 large mushrooms, minced
    1/2 cup finely minced walnuts
    0.5-1 tsp salt
    1 cup fresh spinach, finely minced
    1 tsp mustard
    fresh black pepper, to taste
    1/2 cup wheat germ

Directions

Boil lentils in 1.5 cups water, lower to simmer, partially covered for approx 30 min until soft. When done, drain water (if any left) and mash in bowl with vinegar.
I put the onion in a food processor and then cleaned it and then put all of the other vegetables in the processor after - faster!
Heat oil, sauté onion over med-heat for 4-5 min. Add all other ingredients except wheat germ and saute for 5-10 min until tender. Add the saute and crumbs to the lentils and mix. Chill in fridge before forming patties.
You can form into 4 to 6 patties. I formed into 5 patties for this recipe (in terms of nutritional information).
Fry (use oil or cooking spray) on each side until heated through and crispy on outside.
