Ingredients

1.5 lbs of potatos (about 5 - 6 large potatoes)
1 cup reduced fat buttermilk
3 cups of chicken broth (fat free, low sodium)
2 Tbsp of vegetable oil
1 small red onion
3 garlic cloves
1/2 of shredded cheddar cheese
2 slices of bacon
Directions
Take a large pot and add 3 cups of Chicken Stock over high heat to bring to a boil. Take potatoes and rinse well. Then take a vegetable brush and scrub potatoes to remove as much dirt as possible. Cut potatoes into sixths and add to boiling water. If potatoes are not fully submerged add water to cover. Let boil for abot 10 - 15 minutes until soft enough to poke with a fork. (Don't overcook they shouldn't become mushy and fall apart.) Drain but reserve about 1 cup of the broth. Add the potatoes back to the pot.
While potatoes are boiling cook bacon in a medium sized pan until crispy, about 7-8 minutes. Set aside on paper towel. Add 2 tbsp of oil to pan and put heat to medium. Allow to heat up, then add thick slices of red onion and whole garlic cloves to oil. Cook until garlic is lightly browned and softened. Set aside to cool.
To the pot with potatoes add the buttermilk and 1/2 cup of the reserved chicken broth. Add about 1 Tbsp of bacon drippings/oil from other pan. Mash up everything with forks or a wire masher until well mixed over low heat. Chop garlic and add garlic and cheese to pot. Allow cheese to mostly melt.
Chop bacon and red onion. Mix in these ingredients 1 minute before serving.
Serve and Enjoy!
