Ingredients

8 large eggs
.5 cup of fat free half and half
Pinch of Salt and Pepper
Pinch of ground Nutmeg (optional)
1 link precooked italian sausage, sliced and chopped
.5 cup chopped scallion (white and green parts)
2 cloves garlic, finely chopped
.5 cup green bell pepper, chopped
1 cup fresh asparagus, chopped
8 oz Smoked Gouda, grated
Directions
Preheat oven to 375 degrees. Liberally coat 12-muffin tin with olive oil cooking spray.
Beat eggs in a bowl. Stir in Half and Half and spices. Set aside. Chop and mix remaining ingredients in a separate bowl. Evenly distribute sausage veggie mix in 12 muffin tin. Pour egg mixture over sausage mixture and evenly distribute between all 12, filling 3/4 full.
Bake for 20-25 minutes in the oven until brown on top and knife inserted comes out dry. These will rise quite a bit but will sink back down once they have cooled.
