Number of Servings: 4

Ingredients

    2 cups arugula
    1 cup sliced Summer squash
    1cup Zucchini
    1/2 cup chopped tomato
    1 TB drained capers
    1/4 cup good Parmesan cheese
    1/4 cup lemon juice
    1/4 cup of good olive oil
    cracked pepper and salt to taste

Directions

Mix all the veggies, and mix dressing. Mix together and add cheese.
This is vegetarian, but you can add a can of good Tuna for a more filling meal..plus more protein.

Serving Size: makes 4 servings at 144 calories
