Ingredients


    Ingredients:
    Spinach, frozen, 2 package (10 oz)
    Egg, fresh, 2 large
    Onions, raw, 1 cup, chopped
    *Flour, white, .25 cup
    Baking Powder, 1 tsp
    Milk, nonfat, .25 cup
    Phyllo Dough, 1 oz
    Feta Cheese, 12 oz

Directions

Put frozen spinach in a colander in the sink to thaw - then squeeze all the liquid out . Spray glass 13x9 (approx) dish with olive oil spray. Put a layer of phyllo dough, spray, and repeat until 4 layers are down. Chop onion and place in microwave with a tablespoon of water until soft. (no need to dirty a sauté pan.) Let the onions cool while you combine eggs, milk, flour, baking powder and salt and pepper to taste. Pour over spinach. Add cheese and onions. Spread in pan. Put 4 sheets of phyllo dough on top. Bake at 350 until hot and brown - about 40 minutes. Freezes well - if it lasts that long.
