Introduction

No grains, no gluten, low carb, these are quick to fix in the microwave. They are rich in protein and fiber for a great breakfast! This is perfect for the Paleo diet. Ingredients

    1/4 c flax meal
    1/4 tsp baking powder
    1/4 tsp cinnamon
    dash salt
    2 tsp sugar equivalent

    2 Tbsp butter
    1 egg
    1/2 tsp vanilla
    1/2 c blueberries (optional)

Directions

Mix dry ingredients. (This can be mixed and stored in a ziplock snack bag. I mix several at a time and use as needed.)
In coffee mug or small bowl, melt butter in microwave.
Beat egg, add vanilla, add dry ingredients, then blueberries.
Pour into mug and stir into butter.
Microwave on high 1-2 minutes.
Pour out and put mug into soak immediately!
