Introduction

This bean medley was my attempt to make a homemade chilli with things I had around the house. It turned out to be quite delicious although I didn't get the "chilli" feel from it. My intention was to put it over a baked sweet potato but I ended up eating a cup of it with some shredded cheese sprinkled on top. Ingredients

    Green Beans-Cut (S&Wcanned)
    Stewed Tomatoes-Italian Recipe (S&W canned)
    Garbanzo Beans (S&W canned)
    Lentils, Green (dry)
    Black Beans (dry)
    Carrots, raw, 1 cup, grated
    Thyme, fresh, 3 tsp
    *Onions, dehydrated flakes
    Pepper, red flakes
    Garlic (minced)
    Water, filtered
Bay leaf (1 leaf), 1 serving (remove)
    Basil, 2 tbsp (remove)

Directions

After soaking and rinsing the black beans, throw all ingredients into a crockpot and set for 6 hours. Viola!

You could probably cut a great deal of time by using canned black beans.

Pull out the Bay leaf before serving.

Top with shredded cheese, use as a side dish, put over a baked potato of your choice, in a burrito/soft taco, eat nacho style, or any other way you see fit.

Serving Size: Makes a lot of 1 cup servings!
