Introduction
It's taken a few failed recipes before I finally found a good one. I have tried recipes with fewer calories but the loafs are flat, dense, gooey, and taste just like sweetener.Now....Here is a great tasting banana bread with good height, nutrition, and less calories. It is fantastic with a spread of light cream cheese. It's taken a few failed recipes before I finally found a good one. Number of Servings: 12
Ingredients

1 c whole wheat flour
1 c white flour
1 Tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 c Splenda brown sugar blend
1/2 tsp cinnamon
1 large egg
1/4 c apple sauce
1 1/2 c mashed bananas ( 3 medium bananas)
3/4 c milk 1%
1/2 tsp vanilla
***1 very small banana and 2 half raw walnuts for topping (not to be mixed with other ingredients)
Directions
Heat oven to 350 and spray pan.
Mix all wet ingredients together very well in a medium sized bowl. Mix the dry ingredients together in a smaller bowl. Next add the dry ingredients to the wet ingredient bowl and mix to combine. Pour your batter in the loaf pan and then add some sliced banana and the chopped walnut on top.
****Taste your walnuts first to make sure they are fresh or they will only add a bitterness to the loaf. Just omit them if they are rancid. I also like to add shelled flax seed with, or instead of, the walnuts.
Cook 65 minutes. Let cool in pan 5 minutes before turning onto rack.
Serving Size: Makes a large loaf with 12 good slices.
