Ingredients

1 1/2 cups oatmeal
1 cup whole wheat flour
1/4 cup all purpose flour
3/4 tsp baking soda
1 tsp baking powder
1/2 cup brown sugar packed
1 large egg
1 cup unsweetened applesauce
1/2 cup skim milk
Directions
Preheat oven to 400 degrees. Prepare muffin tin, by lining with paper cups or spraying with nonstick cooking spray.
In a large bowl, mix dry ingredients together. In a medium sized bowl, stir together the wet ingredients. Pour wet ingredients into the dry ingredients and mix, just until combined. May be a little lumpy, but you do not want to overmix the batter.
Pour the batter into the muffin tin. Let rest for 5 to 10 minutes to let the oatmeal absorb some moisture. Bake for 18 to 22 minutes or until a toothpick comes out clean. You can freeze these in a large zipper bag once cooled. Just microwave frozen muffin for about 1 minute or until nice and hot.
