Introduction

More of a side dish for a heartier main course, this salad is light and tasteful when salt and a touch of cayenne are added. After eating, maybe some crumbled feta cheese to taste would be a great addition! Ingredients

    Cucumber (with peel), .5 cucumber
    Garlic, 2 cloves, minced
    Whole Grain Quinoa, 0.75 cup
    2-3 Italian (roma) tomatoes, chopped
    Celery, raw, 2 stalk, medium sliced or diced
    15 oz. can black beans, drained and rinsed
    Lower sodium Soy Sauce, 2 tbsp
    Olive Oil, .125 cup
    Carrots, raw, 1 medium sliced thin
    Fresh lemon Juice, .5 lemon yields
    Crumbled feta cheese to taste

Directions

Cook quinoa (preferably with chicken or veggie stock) as directed and allow to cool.
Mix all ingredients together in a medium bowl and enjoy! Feta cheese is not calculated in nutrition facts
