Introduction

I use a gluten free baking mix that is great but it can be done with Bisquick or the like as well. Can be served as an appetizer or with a meal or as a snack. Easy to take on a picnic. Ingredients

    WISK TOGETHER
    Eggs, 4
    Olive Oil, 1/3 cup
    Oregano, ground, 1 tsp
    Salt, 1/2 tsp
    STIR IN
    Zucchini, 3 cup, sliced
    Onions, raw, 1/2 cup, chopped
    Swiss Cheese, 1/2 cup, diced (remove)
    Pamela ultimate baking & pancake mix, 1 cup
    SPRINKLE ON TOP
    Parmesan Cheese, grated, 1 tbsp

Directions

Cook at 325 degrees in a 9" X 13" dish or a large pie plate for about 30 minutes or until lightly brown on top.
This is good with any hard cheese. For more flavor use a strong tasting hard cheese or for fewer calories use a low-fat cheese.

Serving Size: makes 12 healthy sized servings or 24 appetizers
