Ingredients

    3 lbs summer squash
    1 lb onions
    8 oz package Pepperidge Farms Herb stuffing
    1/2 cup butter
    1 cup shredded carrots
    1 cup non fat sour cream
    1 can cream of chicken soup

    Chop squash and onions and boil for 5 min. Drain
    mix sour cream and soup. add carrots and mix.
    Fold in squash and onions.
    Melt butter. Add stuffing mix and mix well.

    add 1/2 the stuffing mix to the squash mixture and spoon into a 8X11 pan sprayed with Pam
    Top with the remaining stuffing
    Bake 30 minutes at 350.

cook at 350 for 30 minutes
