Introduction

Ingredients

12 cups broccoli florets (raw)
1 handful of Thompson's seedless oragin raisins (Trader Joe's)
2 TB chopped red onion (about 1/4 small)
1 cup roasted cashews (Trader Joe's 1/2 salt)
3 slices Applegate Farms Sunday Bacon, cooked crisp
Dressing:
3/4 c Hain Safflower Mayonnaise
1/4 c Dijon mustard
2 TB Sour Cream
1 1/2 TB apple cider vinegar
5 drops liquid stevia
Directions
Cook bacon in 350 degree oven (I used a baking sheet with a cooling rack to drain away bacon fat... and I cook a pound at a time, but use 3 slices for this recipe).
While the bacon cooks, prep the dressing and remaining items.
Mix mayo, mustard, sour cream, vinegar and stevia until combined and smooth. Set aside.
Wash and chop broccoli into bite-size pieces. Chop onion, small dice. Put broccoli in a large bowl. Add cashews, raisins, and chopped onion. Pour dressing over broccoli bowl. Mix ingredients gently and wait patiently for bacon to cook.
Once bacon is cooked, chop finely into bits. Add to salad and toss lightly. Let stand 5 minutes (while you get the forks and bowls ready). Mix again.
