Introduction

Pretty darn close to my favorite greek soup!

*Trader Joe's brown rice medley is a good blend to use because it gets a little crunch from the radish seeds.

Number of Servings: 10

Ingredients

    Chicken Breast, boneless, skinless- 1.5lbs-trimmed of all fat
    Cream of Chicken (Fit&Active, low fat, low sodium) 2-10.5 oz cans
    Low sodium chicken broth, 12 cups (can use water w/ chicken bouillon)
    *Lemon Juice, 12 fl oz
    Brown Rice, 1.5 cups
    Spinach, fresh, 1 package (10 oz)
    1 can of rinsed and drained garbanzo beans/chickpeas

Tips

I have a 6 quart crockpot and it is FULL to the top when I make this,...but it is oh so delicious!


Directions

Put all ingredients in slow cooker (spinach on the top-smoosh down a little bit). Cook on high for 4.25 hrs. After 4.25 hrs, remove chicken breasts, shred with fork and put back in. Stir and serve hot.

Makes 10 nice regular size bowl servings.
