Introduction

Very easy and very tasty. Very easy and very tasty.
Number of Servings: 4

Ingredients

    2 med. russet potatoes cleaned, chopped, leave the skins on
    1 large egg
    1/4 c Light Mayo
    2 tbsp Dijon mustard
    2 tbsp dill pickle relish

Directions

Boil 2 chopped med. russet potatoes w/ skins, until you can stick with a fork and it flakes away. Boil 1 egg, cool and peel, chop. Cool the potatoes before adding the chopped egg.

Combine egg, potatoes, mayo, mustard and relish. Chill for an hour.

Serving Size: Makes 4 1 cup servings
