Introduction

Chicken cooked in coconut milk spiced with curry and red pepper. Chicken cooked in coconut milk spiced with curry and red pepper.
Number of Servings: 5

Ingredients

    Chicken
    onions, ginger and garlic.
    Coconut oil
    Tomato paste
    Curry powder and caynenne

Directions

Cook chicken in pieces in the coconut oil.
Saute onions, ginger and garlic with the chicken until tender. You may need to add a little more coconut oil at this time.
Push your chicken mixture to the side of the pan and pour in the can of coconut milk and 1/2 the tomato paste. Mix the liquid.
Add the curry powder and caynenne ( the caynenne red pepper is optional ). Bring together the liquid and the chicken mixture.

Serving Size: Makes 5 1 cup servings
