Introduction

My family loves cheesecake but we are all watching our intake of fats and/or sugars. This recipe is very satisfying and delicious -- and nearly instant. If you want to further lower the fat, use all low-fat or no-fat sour cream and cream cheese; I've chosen to leave a little fat in because the rich taste is so satisfying. You can also add another box of sugar-free/fat free pudding mix (or half of one) to make chocolate or butterscotch "cheesecake". Ingredients

    Greek yogurt, cheesecake pudding mix (sugar free and fat free), cream cheese (nonfat, lowfat or full fat), sour cream (nonfat, lowfat or full fat), vanilla, liquid "butter" spray, flavorings as desired.

Directions

Combine all ingredients except the last (sprays) of artificial butter spray and pecans. Mix thoroughly -- about 2 minutes or more, stopping to scrape down sides at least once. When well mixed, spray the insides of small ramekins or cups with the butter-flavored spray then sprinkle finely-chopped pecans to lightly cover the sides and bottoms of each. Divide the filling mixture into the cups and cover each with plastic wrap. Chill.
