Introduction

Adapted from 101cookbooks.com quesadillas recipe. The egg makes a filling quesadilla with very little cheese for flavor. Absolutely delicious, and 47g of great protein! You can change it up and add your own fillings to taste. I often add a little tobasco or hot sauce if you like a kick. Serve with salsa and lite sour cream (not included in calorie count). Ingredients

    1 lb extra lean ground turkey (99% fat free)
    1 package taco seasoning
    PAM
    2 cups egg substitute (egg beaters)
    8 6" corn tortillas
    1/2 cup chopped cilantro
    1/2 cup chopped onion
    1/2 cup shredded low fat mexican cheese blend

Directions

Brown turkey and mix in taco seasoning according to instructions.

Spray a separate small 6" fry pan with PAM (you want the pan to be about the same size as your tortillas)
Place over medium heat and let it heat up. Then pour 1/4 cup egg substitute into the pan. When the egg starts to set up on the bottom (about 10 - 15 seconds) place the corn tortilla on top of the egg. You want the egg to still be a bit runny so it sets into the tortilla. When the egg has set up so it won't run, flip the entire thing over. Your egg will now be on top.
Place 1/4 cup turkey mixture, 1 tbsp cheese, 1tbsp onion, 1tbsp cilantro on top of the egg. Once the cheese gets melty and the tortilla has browned fold the entire thing in half.
Continue to make the rest of the tortillas. Serve as is, or with hot sauce, salsa or sour cream (not included in calorie count).
