Introduction

Ingredients

    2 Trout whole (small-med.)
    6 Tb Almonds, slivered or sliced
    3 Tb canola oil
    1/4 Cup flour
    1 egg white + 1 Tb water
    1/2 cup almonds, slivered or sliced
    1 Tb butter, lite

Directions

Clean the whole trout under cold water and salt lightly. Mix egg white and 1 tb water in a small shallow bow, and in another shallow bowl add flour and lightly sprinkle in salt/pepper (optional). Dip trout in the egg mixture, then the flour mixture to lightly coat each fish. Heat the canola oil in a medium skillet to medium heat, and add the 2 trout. Cook on each side for about 3 minutes each. When the eye is opaque and the meat is easily flaked with a fork, remove the trout and keep warm. Add butter to skillet and add the slivered almonds, sauteing them over medium-high heat until lighlty browned. Add the juice from 1/4 lemon and remove from heat. Pour almond/lemon mixture on top of each trout and serve.

Serving Size: makes 2 large servings (a fish per person), or 4 small servings
