Number of Servings: 2

Ingredients

2 x Chicken Breast, no skin, 500 grams (250g each)
    Feta Cheese, 30 grams
    Spinach, fresh, 30 grams
    Garlic, 2 cloves
    Oregano, ground, 1 tbsp

Directions

Cut a hole in each chicken breast, and push out near the edges with a knife. Don't slice the breast, except for your initial incision. This is easier to do when the breast is partly frozen.

Combine feta and spinach and stuff half into each breast. Use toothpicks to secure the hole in the breast.

Brush garlic over breast and spinkle with Oregano.

Oven bake for about 40 minutes at about 180 degrees celcius. Time will depend on your oven, so keep an eye on your breasts.

I submitted a recipe similar to this only using Collard Greens instead of Spinach. It was fantastic! I imagine this will be just as delicious. - 11/23/13
