Ingredients

    6 large gren onions, sliced
    1.5 green peppers, chopped
    1 can diced tomatoes
    11 baby carrots, sliced
    1 bunch of celery, sliced
    1/2 head of cabbage, cut into bite-sized pieces
    1 pckg onion soup mix
    1-2 bouillon cubes (optional)
    1 - 48oz can VI juice
    8 cups water
    Season to taste with pepper, parsley, garlic

Directions

Saute green onion with cooking spray in large stock pot. Add green pepper, cabbage, celery, carrots to pot. Add canned tomatoes, bouillon, soup mix, V8 and water. Cover and heat on low for a minimum of 2 hours. I let mine go all day. season to taste.
