Introduction
This came from the South Beach Diet Spicy Shrimp and Bok Choy Stir Fry. I used Chicken instead of Shrimp since I can't eat Shrimp. Depending on how spicy you like your food, you can increase or decrease the Chili-Garlic Sauce and/or add some Orange Marmalade to it to sweeten it up and/or cut down the spiciness. Ingredients

12 oz Tyson Grilled Chicken Breast Strips
2 Scallions
1 Clove Garlic
1t Canola Oil
2C Bok Choy
1T Soy Sauce, low sodium
1t Chili Garlic Sauce
3.1oz Noodles, japanese somen
Directions
1. In a large bowl, combine chicken, scallions and garlic
2. In a wok or large non-stick skillet, heat oil over medium heat. Add chicken mixture and cook, stirring occasionally, until everything is heated up, 3 - 4 minutes. Transfer to a large bowl.
3. Return the pan to medium heat. Add bok choy, cover and cook, stirring occasionally until crisp tender, about 3 - 4 minutes. Drain any liquid from the skillet and add bok choy to bowl with chicken.
4. Return the pan to medium. While the pan is heating up, cook Somen noodles. Add soy sauce and chili garlic sauce; stir to combine and bring to a boil. Add chicken mixture and noodles and toss until coated. Cook briefly to just to reheat.
