Ingredients

    1 Cup Quick Oats
    1 1/2 Cups Whole Wheat Flour
    1/2 cup Packed Brown Sugar
    2 tsp Baking Powder
    1/2 tsp Baking Soda
    1 Large Egg
    1 Cup Skim Milk
    3 Tbsp Canola Oil
    1 tsp Vanilla Extract
    2 Cups Blackberries or Other Berries

Directions

Preheat oven to 400 degrees. Spray 12-cup muffin pan with nonstick cooking spray.

Pour milk into a glass, add the lemon juice and leave set.

In medium bowl, combine oats, flour, brown sugar, baking powder and soda. In small bowl, with fork, blend egg, milk mixture, oil, and vanilla; stir into flour mixture until flour is moistened. Fold in berries.

Spoon batter into muffin pan cups. Bake 23 to 25 minutes or until toothpick inserted in center of muffins comes out clean. Invert onto wire rack.
