Ingredients

    Stewed Tomatoes, Canned, No salt, 1.75 Cup (14.5 oz can)
    Light Red Kidney Beans 1.75 cup (15 oz can)
    Carrots, raw, 4 medium
    Celery, raw, 2 stalk, large (11"-12" long)
    Onions, raw, .5 large
    Butter, unsalted, 4 tbsp
    Garlic, minced, 2 cloves
    Cabbage, fresh, 1 cup, shredded
    Parsley, dried, 1 tbsp
    Vegetable broth, 4 cups
    Water, tap, 1 cup (8 fl oz)
    Macaroni, whole-wheat, 3/4 cup elbow shaped
    Salt and pepper to taste

Directions

1. Melt butter or margarine in a heavy pot over medium heat. Add onion, celery, and carrots; saute for a few minutes.
2. Add beans, cabbage, tomatoes, beef broth, garlic, and parsley. Bring to a boil, cover, and reduce heat. Simmer for approximately 1 hour until vegetables are barely tender.
3. Add pasta, and simmer for 30 minutes more. Salt and pepper to taste.
